Filipino chefs bag top honors in Asia’s biggest culinary tilt.

hofex-hkWinning chefs who brought honors to the country: Michael Cheng, Miguel Antonio Lorino and Kerwin Funtanilla, all master chefs from Center for Culinary Arts, Manila.

Filipino culinarians reigned supreme once more as three top master chefs from the Center of Culinary Arts, Manila (CCA, Manila) delivered a stunning win in four individual live-cooking categories – bagging several medals that include two silvers, a bronze and gold with distinction – in the recent HOFEX-Hong Kong International Culinary Classic (HKICC) 2015.

CCA’s winning team – composed of Chefs Kerwin Funtanilla, Michael Cheng and Miguel Antonio Soriano Lorino headed by Team Manager Chef Annali Mariano — was hailed the best and took home the prestigious professional honors in this year’s biggest culinary arts competition event in Asia.

Instrumental in CCA’s successful HOFEX bid are Dr. Veritas Luna, Chancellor for Education; and Ms. Liza Morales, CCA School Operations Manager and this year’s overall Team Coordinator; together with coaches and mentors Chef Josh Boutwood, Chef Sau del Rosario, CCA Culinary Director; and a CCA alumnus who is now a very successful restaurateur. Student-assistants Jade Claudine Quinsaat, Karla Pia Cardenas and Abigail Zandra Marie Ortiz were a big help to the team, as well.

The CCA, Manila delegation to HOFEX-HKICC 2015 is supported by its major sponsors: Clara Ole, Lee Kum Kee, TABASCO and San Remo.

CCA Manila, History Channel, and Pateros Made History with Balut

balutThe duck egg delicacy is often viewed as a rite of passage for any foreign visitor to the country. What is oft forgotten about the humble balut is that it is a thriving industry that is part of the proud heritage in the town of Pateros. It is also vying to make it to the Guinness Book of World Records, in not just one, but two of its latest entries. The Center for Culinary Arts (CCA, Manila) together with the Pateros LGU and the History Channel successfully entered two new Guinness records using the exotic culinary fare.

On April 10, 2015, the CCA chefs, headed by Chef Tristan Encarnacion prepared 1,000 pieces of Balut into an adobo dish that was recorded to have weighed 117.5 kilograms. The resulting dish was enjoyed by the townsfolk in a symbolic boodle fight led by Mayor Joey Medina of Pateros. Two days later, at Market Market, Taguig, CCA again made culinary history by presenting balut in at least 100 different recipes, including smoked salmon-wrapped balut, southwestern balut salad, ensaymada con balut especial, and among others.

balut-2 “These record-setting attempts are an excellent showcase of Filipino culture and culinary talent,” remarked Jacque M. Ruby, Country Head of A+E Networks Philippines, the network that airs the History Channel.  “This is part of our ‘Make History PH’ campaign which aims to showcase that Filipinos can leave a positive mark in the world — that we can create world records that can beat the feats of other nationalities.”

TGIFRIDAY’S new American BBQ Plates

TGIFRidays_BBQ-Burger--May-2015Experience the joy of biting into succulent grilled delights as  TGIFriday’s presents its new American BBQ selection like the Spice Rub Roasted Chicken. The crispy golden skin of the chicken and the juicy meat go perfectly with a medley of herbs and spices. This is served with a creamy side of cheddar cheese mashed potatoes and a special aioili sriracha sauce.

Friday’s Memphis Style Pork Belly is prepared and served exactly the way they do it in Memphis: dry rubbed, slow cooked and roasted using TGIFriday’s signature tangy sweet barbecue basting sauce.  To better enjoy the tender meat, extra flavors are drawn out from a delicious barbecue dip then balanced with additional cheddar cheese, then served with mashed potatoes and corn on the cob.

And what’s a barbecue without the good old burger? It’s no secret that TGIFriday’s has long been known for its amazing and innovative burgers. Friday’s is building on its mastery of the art of burger-making with the BBQ Burger, a thick  and juicy patty smothered with melted Colby cheese..

Those who love seafood know that prawns are scrumptious when grilled. With the Cilantro Lime Grilled Prawns, Friday’s took plump shrimps, slid them into skewers for fire-grilling, drizzled with zesty pico de gallo sauce and served with ripe mango on top of steaming hot rice pilaf.

Grilling brings in an amazing depth of smoky flavor and character to anything that hits the flame. The natural sweetness, tang and distinctive flavor ooze with every bite, enough to make Friday’s got it all plus a laidback casual atmosphere and great service with its “American BBQ” —all-American grilled items Filipino foodies will surely love.

Enjoy Watami’s yummy yakiniku.

Watami’s latest five Yakiniku dishes are sure to delight diners.

A Japanese term which means grilled meat dishes, Yakiniku is similar in concept to the “barbecue” in the Western world.  It was associated with Korean cuisine during the early Showa period. Today, it is commonly used to refer to a Japanese style of cooking where meat and vegetables are cooked over flame of wood charcoals or gas or electric grill.

“We are proud to launch the newest additions to our evolving menu –our five Yakiniku sets are prepared fresh and grilled over tabletop stoves,” says Ms. Lisa Ronquillo, AVP-Marketing.  “We know how Filipinos love grilled dishes. Some bond and celebrate over backyard barbeques. Watami offers that chance of bonding indoors,” she adds

Enjoy the tender and succulent Pork Belly (Php 225/150 grams).  Watami’s grilling technique is sure to bring out the beautiful, soft meat that pork belly is known for.  Or choose to order the Beef Chuck Eye Roll (Php 245/150 grams) that hit the spot for beef lovers.  The pork and beef are first bathed in Watami’s signature Yakiniku sauce, a harmonious mixture of flavors found in garlic, soy sauce, sugar, sesame oil, sesame seeds and spring onions.

And for a more decadent experience, one can indulge in their Self-Grilled Short Ribs (Php 395/100g), Sirloin (Php 395/100 grams) or Angus Rib Eye (Php 495/100 grams) Yakiniku dishes.

All  premium cuts of meat are grilled to perfection and served with the exclusive Yakiniku sauce, both spicy and regular. Itadakimasu! (Let’s eat!)

Siklab turns turon into a die-for delight.

Filipinos love turon—a  sweet saba banana treat that has made a long journey from the streets to dining places.

Just when you thought turon couldn’t get any more exciting, Siklab, The Bistro Group’s Filipino restaurant, gave it a contemporary and unique twist.  It’s called “Turon 2.0”—a stylized version of the ‘street snack’ we all love.

This version is like a banana compote with langka and macapuno fillings, topped with homemade banana and ube ice cream and served in homemade caramelized sugar snap cones. Snacking into this ingenious creation is probably one of the coolest ways to end a meal or cool off anytime, any day.

Siklab, which literally means “to catch fire” or “burst into flames,” is at the third level of Greenbelt 3. The Chicken Barbecue loved for its signature basting sauce, is a signature dish.  Other must tries include Crispy Dinuguan, Kare Kare, Tuna Panga, Pinakbet and Pork Barbecue .

All dishes are prepared with fresh ingredients that are truly Filipino and are the perfect prelude to Turon 2.0—Siklab’s sweet little secret treat.
