Filipino chefs bag top honors in Asia’s biggest culinary tilt.

Filipino culinarians reigned supreme once more as three top master chefs from the Center of Culinary Arts, Manila (CCA, Manila) delivered a stunning win in four individual live-cooking categories – bagging several medals that include two silvers, a bronze and gold with distinction – in the recent HOFEX-Hong Kong International Culinary Classic (HKICC) 2015.

CCA’s winning team – composed of Chefs Kerwin Funtanilla, Michael Cheng and Miguel Antonio Soriano Lorino headed by Team Manager Chef Annali Mariano — was hailed the best and took home the prestigious professional honors in this year’s biggest culinary arts competition event in Asia.

Instrumental in CCA’s successful HOFEX bid are Dr. Veritas Luna, Chancellor for Education; and Ms. Liza Morales, CCA School Operations Manager and this year’s overall Team Coordinator; together with coaches and mentors Chef Josh Boutwood, Chef Sau del Rosario, CCA Culinary Director; and a CCA alumnus who is now a very successful restaurateur. Student-assistants Jade Claudine Quinsaat, Karla Pia Cardenas and Abigail Zandra Marie Ortiz were a big help to the team, as well.

CCA Manila, History Channel, and Pateros Made History with Balut

balutThe duck egg delicacy is often viewed as a rite of passage for any foreign visitor to the country. What is oft forgotten about the humble balut is that it is a thriving industry that is part of the proud heritage in the town of Pateros. It is also vying to make it to the Guinness Book of World Records, in not just one, but two of its latest entries. The Center for Culinary Arts (CCA, Manila) together with the Pateros LGU and the History Channel successfully entered two new Guinness records using the exotic culinary fare.

On April 10, 2015, the CCA chefs, headed by Chef Tristan Encarnacion prepared 1,000 pieces of Balut into an adobo dish that was recorded to have weighed 117.5 kilograms. The resulting dish was enjoyed by the townsfolk in a symbolic boodle fight led by Mayor Joey Medina of Pateros. Two days later, at Market Market, Taguig, CCA again made culinary history by presenting balut in at least 100 different recipes, including smoked salmon-wrapped balut, southwestern balut salad, ensaymada con balut especial, and among others.

Ruby, Country Head of A+E Networks Philippines, the network that airs the History Channel.  “This is part of our ‘Make History PH’ campaign which aims to showcase that Filipinos can leave a positive mark in the world — that we can create world records that can beat the feats of other nationalities.”

Marriott Manila’s Chocolatier Christopher Balane won in Asia’s toughest culinary tilt.

The Filipino chocolatier won a silver medal for his Chocolate Showpiece titled “Dark Disciples” in the largest food and hospitality trade show in Asia-Pacific region, held last May at the Hong Kong Convention and Exhibition Centre

.He bested 30 participants from different Asian countries for the top 2 position in the professional category. His two-feet-tall hand carved masterpiece was inspired by the iconic movie Star Wars and took 200 hours to complete. Made out of dark, white and milk chocolate and colored cocoa butter, the showpiece was brought to Hong Kong in pieces and took another 4 days to complete before it was presented to the judges.

Aside from representing Marriott Hotel Manila, Chef Balane also brought home recognition to the country. Rallying behind him were the hotel’s executive pastry chef Fil Afable and executive chef Meik Brammer.  “We are truly honored to have such great talent in our team.  Not only did you make the hotel and your country proud. You have proven that the Filipinos have a place in the international culinary scene.” said executive chef Brammer.

Let’s honor the special woman in our lives, Mom. Surprise her with some home-cooked goodness.  Take over the kitchen for a change. King Sue suggests some treats for her that can be done right in the comfort of your home

The delicious dishes are easy to prepare.  If your mom loves pasta, there’s the meaty King Sue Salami Lasagna; if she likes macaroni, King Sue Macaroni Overload packed with bacon and bits of deli-burger is a palate pleaser. King Sue Hungarian Sausage Creamy Salad  is another dish that would delight her and the whole family. Indeed, mothers are the queens of our homes and  our hearts. King Sue believes that she deserves the royal treatment.

KING SUE SALAMI LASAGNA

Ingredients:

3 tbsps.  olive oil

3 cloves garlic

1 med.- size white onions, minced

1 can tomato puree

1 tbsp. sugar

1tsp. dried basil

250 gms. King Sue Salami

1 pack cream cheese

1 pack all purpose cream

1 cup cheddar cheese, grated

1 cup mozzarella cheese

6 pc. lasagna noodles, cooked

Procedure:

  1. Saute the garlic and onions in oil.  Add the tomato puree and season with dried basil and salt and pepper.  Adjust the taste with sugar.
  2. Simmer the tomato sauce and set aside.
  3. Cream together the cream cheese and all purpose cream.  Mix until combined.
  4. Layer the noodles, salami, tomato sauce and the cream cheese sauce. Repeat the procedure.
  5. 5.      On the last layer, top with grated cheese then microwave for 2 minutes in high or until the cheese is melted.

 

KING SUE MACARONI OVERLOAD

Ingredients:

450 gms.  elbow macaroni, cooked & drained

2 cloves garlic, minced

1 med.- white onion, chopped

250 gms. King Sue Deliburger

250 gms. King Sue Sliced bacon (cut into 1 inch pieces)

1 big can tomato puree

1 all-purpose cream

2 cups easy-melt cheddar cheese, grated

Procedure:

  1. In a large skillet, cook the bacon until done and crispy.  Remove and sauté onions and garlic in the drippings.
  2. Add the burger/beef  and cook until done.
  3. Add in the tomato puree and let it simmer for a few minutes.
  4. Add in the all-purpose cream, Simmer for a few seconds
  5. Toss in the cooked pasta.
  6. Reduce the heat. Stir in bacon.
  7. Sprinkle cheese on top. Cover until cheese is melted, about 3 -5 minutes. Serve.

 

KING SUE HUNGARIAN SAUSAGE CREAMY SALAD

Ingredients:

280 gms. King Sue Hungarian Sausage, cooked & sliced

300 gms. marble potatoes boiled & halves

2 med.- onions, thinly sliced (caramelized is an option)

Dressing:

1 tsp. garlic, minced

1 eggyolk

¼ cup vegetable oil

salt & pepper

lemon juice

2 tbsps.  Dijon mustard

2 tbsps. cream

parmesan cheese

Procedure for the dressing:

  1. Beat the garlic with egg yolk.
  2. Pour in vegetable oil
  3. Add the mustard and cream
  4. Then season with salt and pepper

For the Salad:

  1. Toss everything into the dressing and sprinkle with cheese.
  2. Cover with cling wrap. Chill until ready to serve.
